Whether it's the 4th of July or a hot August afternoon, you can whip up a cool cocktail and relax. While you are likely not jetting away to the Caribbean for an island escape this summer (but we can hardly wait for next year), you can bring a bit of the islands home with some fun summer cocktail recipes. Come along for a cool sip and take yourself away on a vacation in your own backyard with these cool summer cocktails.

Rum Cocktails from Ron Barceló Rum

We were fortunate to receive a lovely bottle of Barceló Imperial to sample. This is a smooth rum for sipping with notes of vanilla. The range of Ron Barceló rums includes an Imperial Onyx aged for 10 years, a Gran Platinum white rum, an aged Gran Añejo, an Añejo, light clear Blanco, and the smooth Dorado.

Here are a few of my favorite recipes using rums from across the Barceló brand.

Mai House Tai

Who doesn't love a great Mai Tai? This version, using the Barceló Imperial, definitely takes me to the tropics.

Ingredients
  • 2 oz Ron Barceló Imperial
  • 1 oz Grand Marnier
  • 2 oz Passionfruit or Pineapple Juice
  • ½ oz Simple Syrup (optional)
Preparation
  1. Garnish the rim of a rocks glass with Tajin.
  2. Pour all ingredients into a shaker and shake vigorously.
  3. Strain into a glass full of pebbled ice.
  4. Add a dash of grenadine (or cherry juice) for that red bottom look.

Barceló's Quarantini

While we might not be quite as quarantined as we were a few weeks ago, most of us are still staying close to home. This is a fun cucumber and aloe rumtini that brings the tastes of the islands right to your own kitchen.

Ingredients
  • 1.5 oz Ron Barceló Dark Series
  • 1 oz Aloe Vera Juice
  • ½ oz Fresh Cucumber Water
  • 4 slices muddled cucumber
Preparation
  1. Muddle cucumbers.
  2. Add ice and remaining ingredients and shake vigorously.
  3. Strain into a martini glass.
  4. For a touch of spice, garnish with a jalapeño slice.

Pistachio's Nest

This is one of the prettiest cocktails I have ever seen. It is ideal for a backyard summer party (and remember it for next Spring's soirée).

Ingredients
  • 2 oz Ron Barceló Gran Añejo
  • ½ oz Chartreuse
  • ½ oz Pistachio syrup
  • ½ oz Lemon Juice
  • 1 Egg White
Preparation
  1. Add all ingredients into a shaker with ice and shake vigorously.
  2. Strain into a champagne coupe
  3. To create foam, use 2 egg whites and decorate with edible flowers (optional)

Piña Isolada

Yes, take yourself to the Caribbean with this take on a classic cocktail. If you don't like pineapple swap that for frozen coconut, mango, or other fruit.

Ingredients
  • 2 oz Ron Barceló Dark Series
  • ½ oz frozen coconut of soursop
  • ½ cup diced frozen pineapple
  • 2 oz coconut cream
  • 1 oz coconut water
Preparation
  1. Add all ingredients into a blender, and blend until smooth and frosty.
  2. Pour into a daiquiri glass.
  3. Garnish rim with toasted coconuts and top off with coconut flakes (optional)

Dragon's Temperature

I love dragon fruit, but I'm never sure what to do with it. This beautiful drink is ideal for summer sipping and the beauty of the dragon fruit takes it over the top.

Ingredients
  • 2 oz Ron Barceló Dark Series
  • 1 oz Passion Fruit tea
  • Half of a dragon fruit
  • ¼ oz Simple Syrup
  • ½ Lime cut in wedges (tip: cut off the white stem)
Preparation
  1. Muddle lime wedges without touching the skin
  2. Strain lime juice from wedges into a shaker with ice
  3. Scoop out dragon fruit pulp and add with rest of the ingredients
  4. Shake vigorously and serve

Guanajito

This is a fun and unusual take on a mojito. Using the exotic soursop (known as Guanabana in Latin America), this is a refreshing minty drink.

Ingredients
  • 2 oz Barceló Platinum
  • 5 Mint Leaves
  • Soursop pulp (guanabana)
  • ½ Diced Lime
  • ½ oz Simple Syrup
  • Splash of Soda Water
Preparation
  1. Muddle soursop pulp in a mason jar.
  2. Add mint and muddle again.
  3. Add crushed ice, simple syrup, soda, and rum.
  4. Close the lid and shake well.
  5. Garnish with mint leaves and a lime wheel.

Julian's Fro-Groni

While you might think of a Negroni as a winter drink, this chilled version is one of those perfect cool summer cocktails you sip on a long, slow afternoon in the shade.

Ingredients
  • 1 oz Ron Barceló Imperial
  • 1 oz Campari
  • 1 oz Sweet Vermouth
  • 2 oz Red Blood Orange Juice
  • 1 cup Ice
Preparation
  1. In a blender, add all ingredients and blend.
  2. Pour in chilled rocks glass.
  3. Garnish with fresh sliced blood orange.

Saint Liberty Whiskey Celebrates Prohibition-era Women Bootleggers

I love the stories behind distillers. They are usually quite fun and Saint Liberty Whiskey is no exception. It celebrates the stories of Prohibition-era women bootleggers from across the US. Each whiskey is bottled in the state where the women resided. Saint Liberty recently launched Bertie's Bear Gulch Bourbon Whiskey. It honors African American homesteader Bertie “Birdie” Brown. Bertie's Bear Gulch is 87 proof with flavors of rich dark molasses, caramelized vanilla, apricots, brown sugar, and a hint of smoke. Look forward to two additional offerings—Josephine's Flat Head River Rye and Mary's Four Grain Bourbon. Here are three great cocktails using Bertie's Bear Gulch Bourbon Whiskey.

Bertie's Berry Smash

This sounds like all of my favorite summer flavors in a glass.

Ingredients
  • 2 oz Bertie's Bear Gulch whiskey
  • ¾ oz fresh lemon
  • ¾ oz thyme syrup
  • 4 drops Fee Brother's orange bitters
  • 2 strawberries (sliced & muddled)
  • Strawberry for garnish
  • Thyme for garnish
Preparation
  1. Place the strawberries in a shaker and muddle them.
  2. Add the whiskey, lemon, thyme syrup, and bitters.
  3. Shake vigorously.
  4. Pour in a rocks glass filled with ice.
  5. Garnish with strawberry and thyme.

Skinny Liberty Amaretto Sour

This is a fun skinny version—ideal for summer—of the classic Amaretto Sour made with Saint Liberty's Bertie's Bear Gulch Straight Bourbon Whiskey.

Ingredients
  • 1½ oz Bertie's Bear Gulch Bourbon Whiskey
  • 1 oz Amaretto Liqueur
  • 2 oz fresh Lemon Juice
  • 1 oz Agave Syrup
Preparation
  1. Mix all ingredients in a shaker.
  2. Pour into a highball glass over ice.
  3. Garnish with a twist of lemon and cherries.

Bertie's Bramble

A bramble is completely about summer. Growing up, a bramble was a prickly shrub that held the juiciest blackberries or raspberries. Then, in the 1980s, London mixologist Dick Bradsell developed a summertime cocktail called the Bramble. In his recipe, it was a mix of gin, lemon juice, simple syrup, and fresh blackberries. In this Saint Liberty version, they add in a bit of sparkle with some Prosecco.

Ingredients
  • 1¼ oz Saint Liberty Bertie's Bear Gulch Bourbon
  • ½ oz fresh Yuzu or Lemon Juice
  • ¾ oz Blackberry Syrup
  • 2 oz Prosecco
  • 2 Fresh or Frozen Blackberries for garnish
Preparation
  1. Put Bourbon, Yuzu, and Blackberry Syrup in a shaker with ice.
  2. Shake vigorously.
  3. Strain into a chilled champagne flute.
  4. Top with Prosecco.
  5. Garnish with blackberries.

Fun Wine Cocktails

I'm not usually one for flavored wines, but summertime heat calls for drastic measures. I was able to sample the three flavors of Fun Wine—Coconut Chardonnay, Strawberry Rosé Moscato, and Sangria. I loved the Sangria and drank it mostly on its own. I found the other two were too sweet for me on their own, but in these cocktails, they turn into another of those perfect summer cocktails.

Chocolate Strawberry Negroni

This is a fun take on a negroni using two of my favorites—chocolate and strawberries. What's not to like?

Ingredients
  • 1 oz Aperol Spritz or Campari
  • Dash Chocolate Bitters
  • 4 oz Fun Wine's Strawberry Rosé Moscato
Preparation
  1. Shake ingredients.
  2. Serve on the rocks in a wine glass.
  3. Garnish with an orange slice (optional).

Miguel's Colada

We all seem to relate pineapple and coconut to those hot summer days. Bring the Caribbean home with this fun take on a piña colada, using Ron Barceló rum and Fun Wine's Coconut Chardonnay.

Ingredients
  • 2 oz Barceló Rum
  • Frozen pineapple or coconut
  • 2 oz Fun Wine Coconut Chardonnay
Preparation
  1. Put all ingredients in a blender.
  2. Blend until frosty.
  3. Serve in a chilled glass.
  4. Garnish with a lemon wedge or a chunk of pineapple (optional).

SoNo 1420 Brings Botanics to Cool Summer Cocktails

I have yet to try SoNo 1420, but it sounds really interesting and they offer up a few cool summer cocktails that I find intriguing. SoNo 1420 has two whiskeys, one of which is a rye whiskey. Both are distilled from grains and hemp seed and finished in oak barrels. I'm told the botanicals change the flavor of the whiskey, so I'm eager to try. SoNo 1420 also offers three different gins and vodkas. These are all distilled naturally, with no artificial flavors, sugar, nor sweeteners. Check out these two refreshing cocktails, one with whiskey and one with vodka.

Berry Mint Julep

A good mint julep screams summertime, especially those long lazy summer afternoons.

Ingredients
  • 2 oz SoNo 1420 Hemped BBN
  • 1 oz Blackberry Puree
  • ¾ oz Fresh squeezed Lemon Juice
  • ½ oz Mint Syrup *
  • 4-5 Mint Leaves
Preparation
  1. Muddle mint leaves with syrup in a shaker.
  2. Add remaining ingredients.
  3. Shake well.
  4. Strain over fresh ice into a rocks glass

* Note: To make Mint Syrup: Bring simple syrup to boil (1:1 sugar and water) with a bunch of mint. Set aside to cool, and then remove the mint.

Lemon Haze

Remember those summer days as a kid sipping on lemonade? Try this summer cocktail for a grown-up version of that favorite summer drink.

Ingredients
  • 2 oz SoNo 1420 Le Fresh Lemon Vodka
  • 1 oz Strawberry Puree
  • ¾ oz Fresh squeezed Lemon Juice
  • ½ oz Orange Liqueur
Preparation
  1. Add all contents to a shaker.
  2. Shake well.
  3. Pour into a rocks glass filled with ice.
