Bespoke Wine

CORE Kitchen & Wine Bar at The Ritz-Carlton, Dove Mountain has something new to toast: the debut of its own custom wine, Dove Mountain Cuvee. The signature pinot noir blend is the result of a unique collaboration between The Ritz-Carlton sommelier Michael West and Dutton-Goldfield Winery of California's Russian River Valley. Dan Goldfield and West spent hours blending millimeter by millimeter to create Dove Mountain's ideal wine. "I was able to spend time with Dan in the field," West says. "I had a chance to ask him about his winemaking style, his years of experience and the thought process behind his single vineyards. This turned out to be the foundation of our friendship and what led us to be able to put together the signature blend for Dove Mountain." We're raising our glasses to this beautiful beginning. $20 per glass, $78 per bottle, The Ritz-Carlton, Dove Mountain, 15000 N.
