Spring and summer are the ideal seasons for a cool cocktail. Whether you whip one of these up on your own—or head into a local eatery and order one—they are the ideal way to say hello to Sunny Summer. Here are a few of my favorite spring and summer cocktails with recipes.

Spring and Summer Cocktails with Tanteo Tequila

I love a good tequila and on a hot summer day, a tequila cocktail is my idea of fun and delight. Here are a few recipes using Tanteo tequilas. Some are infused, all 100% agave tequilas, with a fun twist.

Extra Hoppy Margarita

This cocktail is made with 2 oz. of extra spicy Tanteo habañero infused tequila and is designed for spice lovers that can handle the extra kick. The tequila marries well with carrot juice, lime, and some agave nectar.

Recipe:

Jalapeñ-yo Lavender Cocktail

This beautiful lavender colored cocktail looks sweet but once you take a sip, the Jalapeño flavor kicks in as a pleasant surprise. Mix the Tanteo jalapeño infused tequila with Lavender syrup and fresh lime juice. If you are feeling extra crafty, here is how you can make your own lavender syrup. Tanteo suggests rimming this cocktail with Tanteo Jalapeño Salt and garnish it with candied lavender.

Smokey Hibiscus Margarita

Playing off a popular mezcal recipe, the Tanteo chipotle-infused tequila with Hibiscus results in a pleasant concoction of smoke and sweetness. This cocktail is an acquired taste—ideal for craft cocktail connoisseurs.

Jalapeño Cilantro Margarita

The Tanteo Jalapeño Margarita is a staple for every occasion. You get this pretty pastel green thanks to blending a bunch of fresh cilantro with fresh Jalapeño peppers. The result is a delicious twist to the classic Tanteo Jalapeño Margarita. The color is perfect and it tastes even better.

Maison Marcel Rosé French Fashioned

How about using great wines for spring and summer cocktails? Nope, this is not your mother’s wine cooler. For me, I love a good rosé in warm weather. Maison Marcel is a unique take on my favorite French rosé. It’s a blend of Grenache, Merlot, Black Muscat, and White Muscat. This vibrant wine is great on its own—crisp and refreshing—and is the ideal drink for a warm spring or summer evening.

Recipe:
  • 1 oz Ultra Premium Bourbon
  • 4 oz Maison Marcel Rosé
  • 2 Dashes Rhubarb Bitters
  • Large format strawberry-infused ice cube (Add sliced strawberries into large ice molds. Add water and freeze.)
  • Brandied cherry and grapefruit peel for garnish
Directions:
  • Combine Bourbon, Marcel, and bitters into a mixing glass with ice.
  • Strain into a rocks glass with a strawberry ice cube.
  • Garnish with a brandied cherry and grapefruit peel.

Texas Hill Country Cocktails

The weather gets warm in balmy each spring in the Texas Hill Country. A great place to relax and unwind is at the beautiful JW Marriott San Antonio Hill Country Resort & Spa. It’s an ideal place for relaxing, chilling by the pool, and having great cocktails. Here are few of their favorite spring and summer cocktails that you can make for yourself—or stop by and let them do all the work.

Mother Mayo Margarita

Mother Mayo Margarita, inspired by the San Antonio culture with a blend of tequila and jalapeños, also brings in a unique twist with mezcal and pineapple.

Recipe:
  • Pineapple
  • Cilantro
  • Jalapeños
  • 1 oz reposado tequila
  • 1 oz mezcal
  • 1 oz agave
  • 1 oz lime juice
Directions:
  • Muddle the pineapple, cilantro, and jalapeños.
  • Add mezcal, lime juice, agave, and tequila.
  • Shake, double strain and serve over fresh ice.
  • Garnish with jalapeño and pineapple.

Bourbon Lemonade

Many times we think of bourbon as a winter drink on a cold evening. But, blend up some Buffalo Trace Bourbon with fruit and lemonade and you have a refreshing summer drink. You can order one of these in the Crooked Branch lobby bar at JW Marriott San Antonio Hill Country. And, as if you needed a good excuse, remember that June 14 is National Bourbon Day!

Recipe:
  • 1.5 oz Buffalo Trace Bourbon
  • ½ oz Strawberry Puree
  • 1 Fresh Squeezed Lemon Wedge
  • Splash of Lemonade
Directions:
  • Shake all ingredients together.
  • Pour over ice.
  • Garnish with lemon wedge and fresh mint.

The Maude Mule at Bar Six40 in Scottsdale

Arizona is hot in the late spring and summer. Perfect pool weather! And don’t forget to order up a great refreshing cocktail. I recommend the Maude Mule at Bar Six40 at The Scottsdale Resort at McCormick Ranch in Scottsdale. It is lovingly named for Winfield Scott and his wife Helen’s favorite mule, Maude. They traveled from the North and settled on a 640-acre parcel of land that has now become the city of Scottsdale.  This crisp cocktail features Mission Vodka, ginger beer, muddled blueberries and lime giving it both sweet and bright notes. Order one up for $13.

Miraval Resort’s Arizona Sunset

This one is a guest favorite at Miraval Resort! Serve something new with this mindful cocktail that is easy-to-make and perfect for your upcoming festivities. You can try out one of your own at home or head to Tucson’s Miraval Resort and have the bartender prepare a cool one to enjoy under the Arizona sunshine.

Recipe:
  • 2 oz Orange-infused Vodka
  • 1 oz Lemon Juice
  • 1 oz cranberry juice
  • 1 oz simple syrup
  • Ice
  • 2 Jalapeño rings
  • Coupe glass
Directions:
  1. Muddle 1 Slice of Jalapeño in mixing tin
  2. Fill mixing tin with ice
  3. Add vodka, lemon juice. cranberry juice and simple syrup to mixing tins.
  4. Shake & strain into a coupe glass.
  5. Garnish with Jalapeño slice.

Strawberry Rum Punch

“When I think of great spring ingredients, strawberry is the first thing that pops into my mind.  The house-made strawberry purée gives a unique seasonal twist on the classic in our Strawberry Rum Punch.” 

Recipe:
  • Rum Haven Coconut Rum
  • Strawberry Puree
  • Pineapple Juice
  • A hint of lime
Directions:

Handshake and serve in a highball glass.

Moonshine Lemonade

Cool Down with a Spanish Sunset in NOLA

I don’t know if you’ve ever visited New Orleans in the summer months, but as my Southern neighbors would say, “It’s hot, ya’ll.” Finding cocktails might be easy in The Big Easy, but at the new Costera, you can find some cool Spanish-inspired cocktails. Chef Brian Burns offers Spanish coastal cuisine and Reno De Ranieri pulled together an amazing beverage program. This is one you really need to head to New Orleans to try for yourself.

The Spanish Sunset Cocktail is hand-crafted with cava (Spain’s amazing sparkling wines), fresh Louisiana strawberries, mint, and a touch of black pepper. I think that’s a perfect combination to cool down in the Louisiana heat.
