Classic tea flavors find their way to the bar scene with the “All American Chai” and “Two Birds with One Stone” cocktails available Feb. 1 through Apr. 30, 2016, at Proof, an American Canteen, and Onyx Bar and Lounge at Four Seasons Resort Scottsdale at Troon North. The cocktails are being offered as part of Four Seasons’ Cocktail Quarterly initiative, a global year-long beverage-focused initiative devoting attention to one cocktail trend, seasonal ingredient or technique, brand-wide, every three months.
The “All American Chai,” created onsite by cocktail connoisseur and Proof Bartender, Daniel Phillips, features the classic flavors of chai tea with Dancing Pines Chai Liqueur, a small batch distillery in Colorado. Proof patrons can sip and savor the coffee house inspired cocktail at a cost of $14.
“Many liqueurs use artificial ingredients and extracts to create their desired flavor profile, but this particular distillery uses only whole, organic ingredients,” says Phillips. “Chai is a popular combination of flavors among tea connoisseurs, so it was important for us to find a product that stays true to the essence of the spices you would find in a traditional chai tea.”
The “Two Birds with One Stone” cocktail, created by Onyx Lounge Assistant Manager Nick Padua, features Rishi chamomile tea. The name alludes to the drink’s versatility to be served on ice to revive and replenish after 18 holes of golf or served hot while watching the sun set over Pinnacle Peak. Local Sonoran honey adds a touch of sweetness, and house-made orange marmalade and locally grown Meyer lemons complete the cocktail. Onyx Bar & Lounge patrons can enjoy the cocktail at a cost of $16. Guests dining in Talavera may also enjoy the tea-infused drink, perfect as an after dinner digestif.
“Springtime in the Sonoran Desert often brings warm days and cool nights and we wanted to create a cocktail guests could enjoy at any time of day,” explains Padua. “Dewars White Label Scotch lends earthy tones as a base spirit, while the Rishi loose leaf chamomile tea provides floral notes and color.”
Adjacent to Talavera, Onyx Lounge receives its namesake from the amber color-ribboned onyx framing the bar. The Lounge showcases a menu of shareable plates and unique entrees, which complement the extensive selection of wines by the glass as well as sweet and savory cocktail combinations. The patio of the Lounge is framed by glass, offering un-obstructed views of the surrounding Valley and desert beyond. Open daily at4pm. Live music every Friday and Saturday.
Proof, an American canteen, debuted fall 2012 at Four Seasons Resort Scottsdale. The restaurant presents homestyle comfort fare sourced exclusively from the 50 states, and features breakfast, lunch and dinner. Menu choices include fried green tomatoes, Arizona’s own gumbo, and chicken and waffles with bacon and bourbon syrup. An old fashioned soda fountain serves up nostalgic milkshakes, malts and floats. Guests can take in the outdoors from every angle with walls that open to views of Pinnacle Peak and extensive patio dining. Televisions, games and a bustling bar bring buzzing energy to the restaurant on a nightly basis.
