Depending on your age, when you think of food trucks, you may picture the non-descript mobile eatery that would show up at your high school serving up an alternative to the usual cafeteria food. Mobile dining was also popular with street vendors, particularly on the East Coast where cold New Yorkers huddled around a hot dog cart to grab a dog before running to the next appointment. Thankfully, the food world—particularly the food truck world—has seen a revolution.
